You guys know I LOVE a chop chop salad and this combo might be my new favešŸ™ŒšŸ¼


This recipe is packed with tons of colorful veggies, feta cheese, and chicken for protein. Tossed in a simple and refreshing homemade dressing made with olive oil, Trader Joeā€™s Caesar, and a touch of salt and lemon.


Itā€™s great served cold, which makes the perfect summer dish to bring to a gathering or to have for lunch all week.

Chicken Broccoli and Corn Chop-Chop Salad

Prep Time: 10 minutes Servings: 5-6


Ingredients:

  • 1 head of raw broccoli, chopped up super fine (no need to cook)

  • 1 diced red onion

  • 1/2 a bag of organic corn

  • 1 diced bell pepper

  • 1 container of feta

  • 5 diced organic chicken thighs

  • Dressing (to taste): a little bit of olive oil, Trader Joeā€™s vegan Caesar, and a touch of salt and lemon


Instructions:

  1. Wash and finely chop all vegetables

  2. Add all ingredients into a large bowl and mixed well

  3. Toss with the dressing
