Pumpkin Seed Flax Granola! This recipe adds a nutritional punch💥 to my classic granola recipe with the addition of pumpkin seeds and flax.
Pumpkin seeds are rich in zinc, one of the best sources of magnesium, and provide antioxidants, healthy fats, and protein.
The addition of flax adds a boost of fiber and anti-inflammatory omega 3’s🙌🏼
If you have been following me for a while, you know I ALWAYS make a weekly batch of granola without fail. It’s the easiest to throw together, much more affordable than store bought, and totally customizable depending on what ingredients you have on hand.
Pumpkin Flax Seed Granola
Prep Time: 10 minutes Bake Time: 20-24 minutes
Ingredients:
4 cups rolled oats
1 ½ cups pumpkin seeds
1/3 cup ground flax
1 tsp cinnamon or pumpkin pie spice
1 tsp sea salt
1/2 cup avocado oil
1/3-1/2 cup maple syrup, to taste
1 tsp vanilla extract
Instructions:
Preheat oven to 350 F.
Combine all dry ingredients, mix well and then add in wet ingredients. Mix again.
Spread mixture in an even layer on a baking sheet lined with parchment paper
Bake for 20-24 minutes until golden brown, tossing granola halfway through cooking.
Let cool before serving. Store in an airtight container.
